Orange Spinach Salad

We try our best to eat healthy in our house. We don’t follow any specific diet, we don’t have any food groups we don’t eat. I have a few specific food I don’t like (looking at you pickles and olives), but my husband will literally eat anything. I mean he ate beef and ants in Cambodia and said it “wasn’t bad.”
Mostly our meals consist of protein in the form of smoked or grilled meats (perks of having a grill master husband!) and vegetables. I try not to add too many “carbie” foods as sides so we refrain from potatoes, breads and pasta for the most part. This salad has recently become one of my favorites to make. It’s loosely based on a salad I tried at our Grocery store one week.I love that’s it’s simple but delicious and the dressing is the first non-creamy dressing I have ever liked!
2 cups fresh Spinach
1 Navel Orange
3 Strips Bacon
3 tablespoons Goat Cheese
4 tablespoons Balsamic Fig Salad Dressing
- Add 2 cups of spinach to large mixing bowl and set aside.
- Peel orange and cut each slice into thirds, add to spinach
- Cook bacon and crumble or cut into small pieces. Add to bowl
- Add Goat cheese crumbles to mixing bowl.
- Measure out and add dressing to bowl
- Mix salad together thoroughly and serve.
- Makes two servings!
That’s it! I told you it was easy! It usually takes me about 10 minutes to make and that includes cooking the bacon. If you pre-cook the bacon it would be even quicker! It’s so good that I think we’ve had it 4 out of 7 nights this week. I found the dressing at Costco but you could also order it on amazon here. Goat cheese has become my new favorite cheese for salads lately. It’s just so creamy and the taste just add that little something extra to the salad.
This salad is so versatile too. I’ve made it with other fruits when I didn’t have any oranges. Just the other day I made it with apples and it was just as delicious.
